Christian Collovray/Jean Luc Terrier

Collovray et Terrier

For several years now, Christian Collovray and Jean Luc Terrier (of Domaine des Deux Roches) have been purchasing grapes from nearby vineyards, from parcels that are contiguous with their own vineyards and always with the same terroir as their vineyards. They are calling the wines that they bottle with some of these grapes as well as their own grapes "Collovray et Terrier."

Pouilly-Fuissé Vieilles Vignes, Collovray et Terrier: La Roche is one of the most famous of the offically recognized lieux-dit in the Appellation Pouilly-Fuissé. The vines at La Roche ("the rock") are located on the slopes below an imposing calcareous outcropping near the village of Vergisson. The tiny plot of vines from which the wine is made averages 50 years of age. The wine is vinified and aged in oak barrels. The Pouilly Fuissé "Vieilles Vignes" is a wine with enormous race ("breeding" or "class"), finesse and length. This wine can be appreciated on its own or with seafood or chicken in a cream sauce.

MACON Villages, Collovray et Terrier: The Collovray et Terrier Macon is exceptional: it is a lovely, buttery and pure expression of Chardonnay that "fits" the "frame" of its terroir perfectly. It is always fine, long in the mouth, very well-balanced, and drinks beautifully almost from the very start of its life


in bottle. The average age of the vines is 10-15 years, the average yield 60-70 hectoliters per hectare, and the wine is entirely vinified and aged in large stainless steel vats. The wine has a crisp palate with a note of lemon meringue. Guide Hachette 2006 says of this wine: "An intense, frank and complex nose, fruity flavors with delicate smoked notes. The long mouth, well structured and supported by a tempting freshness which leaves a delightful flavor in the mouth. A rich wine with a certain class to allure your guests."

Saint-Veran, Collovray et Terrier: For this wine, the Domaine buys grape juice from two small growers in Davayé which it vinifies itself, buys finished wine from a third local grower, and ages the whole in stainless steel tanks. The resulting wine is entirely from the commune of Davayé and has the finesse of the cuvée from the Domaine's own vines without perhaps quite the length and frame- or price. The wine has a good floral character, good acidity and ripe, rich fruit on the palate.

MACON Villages, Collovray et Terrier: The Appellation Macon terroir consists normally of the lower slopes with less rocks and more silt in the soils. The Domaine des Deux Roches’ Macon is exceptional: it is a lovely, buttery and pure expression of Chardonnay that fits the frame of its terroir perfectly. It is always fine, long in the mouth, very well-balanced, and drinks beautifully almost from the very start of its life in bottle. The average age of the Domaine’s 4 hectares-plus of vines is 10-15 years, the average yield 60-70 hectoliters per hectare, and the wine is entirely vinified and aged in large stainless steel vats. The wine has a crisp palate with a note of soft pear and apple flavors. Guide Hachette 2006 says of this wine: “An intense, frank and complex nose, fruity flavors with delicate smoked notes. The long mouth, well structured and supported by a tempting freshness which leaves a delightful flavor in the mouth. A rich wine with a certain class to allure your guests.” It is a delicious and ripe chardonnay that pairs well with chicken.

Pouilly-Fuissé, Plénitude de Bonté, Collovray et Terrier: The vineyards for this new wine, introduced in 2006, are located in the villages of Fuissé, Vergisson and in the hamlet of Pouilly. Fuissé brings floral aromas to the wine, Pouilly power and Vergisson minerality. These are old vines, on a sunny, rocky slope. Both the alcoholic and malolactic fermentations take place in oak barrels. The name of the wine comes from an old French expression which says that grapes should be harvested at the height of goodness, that is to say when the grapes are completely ripe and good.

Jeunes Vignes blanc, Collovray et Terrier: This wine, from young vines in the southern region of Languedoc Roussillon, is an assemblage of Mauzac, Chardonnay, Grenache blanc and Vermentino. This is a light, fruity and invigorating wine aged entirely in stainless steel vats. The wine is very aromatic; the mouth is round and well-structured. One finds chiefly citrus aromas, orange, lemon and flowers.

Jeunes Vignes rouge, Collovray et Terrier: An assemblage of Merlot, Cabernet Franc, Cabernet Sauvignon and Syrah, this wine from young vines (average age 10 years) harvested in the southern region of Languedoc Roussillon, has an aromatic palette of red fruits, principally strawberries and cherries.

Jeunes Vignes rosé, Collovray et Terrier: An assemblage of Cinsault and Syrah, this wine from young vines (average age 10 years) harvested in the southern region of Languedoc Roussillon is a bright rose color. The aromatic palette is composed of flowers and fruits.
